Calamarata orientale con zucchine seianesi e dadolata di pomodori sorrentini

Ingredients

  • 350 g calamarata orientale dei Campi
  • 300 g zucchini
  • 100 g lard
  • 200 g tomatoes
  • Basil leaves
  • 50 g onion
  • Extra-virgin olive oil
  • Parmesan

Instructions

Chop the onion and sauté it in a pan with the a bit of oil and the lard (which you have cut julienne before adding to the pan). Add the sliced zucchini and cook, adding a little bit of water. Peel the tomatoes and remove the seeds, then cut them into cubes. Season the tomatoes with salt, oil, and basil.
Cook the pasta in plenty of salted water until al dente, drain, and mix together with the zucchini.
Add the tomatoes and a sprinkling of parmesan and serve.
