Gnocchetti sardi, pomodoro, burrata e calamaro

Ingredients

  • 150 g gnocchetti sardi dei Campi
  • 1 burratina (special cheese similar to mozzarella)
  • 1 beefsteak tomato
  • 1 very fresh squid
  • 1 bunch basil
  • 1 clove garlic
  • Dry white wine
  • Extra-virgin olive oil
  • Salt

Instructions

Heat a small amount of olive oil and add the clove of garlic. Remove the garlic as soon as it begins to color and add the chopped tomatoes. Let them cook for 5-7 minutes. Fill the cleaned squid with the chopped burratina, then place it into the hot sauce, turn off the heat, and cover.
Boil the gnocchetti sardi and drain them when al dente. If you have chopped the tomatoes into more or less the same size as the gnocchetti sardi, it will be a beautiful dish. Blend the basil with a touch of dry white wine. Add the gnocchetti sardi to the sauce and mix. Place the pasta into a serving dish and finish by placing the squid “surprise” in the center. Cover the squid with the basil sauce you have made and add a few leaves of basil as garnish on the side.
