Gnocchi sardi alla campidanese

Ingredients

  • 350 g gnocchi sardi dei Campi
  • 200 g fresh sausage
  • 800 g ripe tomatoes (or 500g canned peeled tomatoes)
  • 1 onion
  • 80 g seasoned pecorino sardo
  • 1 pinch saffron
  • 2 Tbsp extra-virgin olive oil
  • Basil
  • Salt

Instructions

Heat the oil in a saucepan and sauté the onions together with the sausage (added in small pieces). When the onion begins to change color, add the tomatoes (after you’ve passed them through a vegetable mill), salt, saffron, and a few leaves of basil and let cook for at least 45 minutes.
Cook the gnocchetti in plenty of salted water, drain them when al dente and mix them with the sauce. Sprinkle with grated pecorino and serve hot.
