Linguine al radicchio rosso

Ingredients

  • 350 g linguine dei Campi
  • 3 heads red radicchio
  • 1 clove garlic
  • Extra-virgin olive oil
  • Salt
  • Pepper

Instructions

Remove the outer leaves of the radicchio before washing them. Rinse and cut them into thin strips, discarding the head.
Heat a few teaspoons of oil in a pan, add the garlic and lightly brown it before adding the radicchio. Add salt and cook for about ten minutes. Taste and adjust for seasoning.
At the same time cook the linguine in a generous amount of salted water. Drain them when cooked al dente and add them to the radicchio. Serve immediately, adding a drizzle of extra-virgin olive oil to each serving.
