Orecchiette con salsiccia e cime di rapa

Ingredients

  • 350 g orecchiette dei Campi
  • 100 g fresh Italian sausage
  • 600 g broccoli raab
  • 2 Tbsp extra-virgin olive oil
  • 2 cloves garlic
  • Dry wine
  • Spicy pepper
  • Salt

Instructions

Cut the hard part of the stems off the broccoli raab and peel the remaining parts, then wash them well under running water and cook them in salted boiling water. Let them cool down, rinse them, squeeze out any additional water, and then cut them into large pieces.
Heat the oil in a pan and add the garlic and spicy pepper. When the garlic begins to change color, remove it from the pan and add the sausage already broken up into pieces. Brown the sausage over high heat for a few minutes before adding a bit of wine. Simmer and reduce. Add the broccoli raab with a pinch of salt and let everything cook together for a few minutes.
Cook the orecchiette until al dente and then add them to the sauce and mix everything over high heat for a minute or two. Serve immediately.

Note

This is an easy recipe to make that is quite tasty and perfect as a winter pasta. The sausage adds a rich and savory taste to the pasta while the broccoli raab is slightly bitter, adding a touch of freshness and character to the dish.
