Penne mezzani rigate ai carciofi

Ingredients

  • 350 g penne mezzani rigate dei Campi
  • 5 small artichokes
  • 2 Italian sausages
  • 1 scallion
  • 1 lemon
  • Extra-virgin olive oil
  • Parsley
  • Pecorino
  • Salt e pepper

Instructions

Clean the artichokes and remove all tough parts (most of the outer leaves) and cut them into strips. Soak them in water and lemon juice for ten minutes before boiling them.
In a saucepan sauté the scallion with the extra-virgin olive oil, then add the sausage in pieces and finally the artichokes. Adjust for salt and pepper and let cook over high heat.
Cook the penne in a generous amount of salted water, drain them when al dente, then add them to the sauce with a sprinkling of pecorino and parsley.
