Pennoni lisci con fave e guanciale

Ingredienti

  • 350 g pennoni lisci Pastificio dei Campi
  • 350 g fresh fava beans
  • 150 g guanciale
  • ½ cup white wine
  • 50 g pecorino
  • Extra-virgin olive oil

Instructions

Remove the thin outer skin from the fava beans (so that they are sweeter). Cut the guanciale into small cubes and brown them in a small amount of oil, then add the white wine. Add the fava beans to the pan with a cup or so of water, taste for salt and pepper, and cook until the fava beans are tender. Cook the pennoni until they are al dente, drain, then add to teh sauce and mix well. Finish the dish with some grated pecorino and serve.
